One of the islands’ most respected restaurateurs and Hawaiian regional cuisine founder Chef Mark Ellman opened the first Maui Tacos location in Napili back in 1993. Craving for the ubiquitous Mexican fare from his years in Southern California, Chef Mark wanted to present the cuisine using local ingredients. He has since sold the franchise and Maui Tacos outposts can now be found on Oahu, the Big Island, and across the US mainland.

From the fresh island fish in the grilled tacos to the pineapples in the salsa, Hawaiian inspirations are found throughout the menu. Maui Mex rice bowls can be had with slow-cooked Hawaiian BBQ pork, chicken adobo, marinated grilled fish or chipotle shredded beef. Order any of the hefty Surf Burritos “wet” in a pool of enchilada sauce and cheese. Vegetarian options include the quesadillas or the chimichanga with Mexican rice, potatoes, pinto beans, sour cream and fresh guacamole. For desserts, try the churros with caramel sauce or fried Roselani’s creamy vanilla ice cream peppered with coconut and corn flakes.
